Garlic Scapes are the tender stem that produces the flower in the hardneck garlic plant. They grow up and curl. When harvested they can look like long green beans. Garlic scapes taste like a unique blend of onion, scallops, and garlic. Then tend to not have as spicy as a flavor and have a fresher green taste than the actual garlic bulb. They do great cooked fresh or frozen. You can store in the refrigerator for up to two weeks. Scapes are very versatile and can be used in a variety of recipes. They can be sautéed, pureed, roasted and pickled. (Sautéed in butter and sprinkled with salt, they make an excellent burger or sandwich topping, or even a kid-friendly side vegetable.) Very tasty in Asian Cuisine or even in something as simple as eggs. |
